Roasted Mushrooms with Garlic-Thyme Butter

Ingredients

> 4 (3.5 oz) pkgs oyster and/or shiitake mushrooms
> 3 tbsp olive oil
> 2 tbsp butter, cut up
> 1 tbsp minced garlic
> 2 tsp fresh thyme leaves

Preheat oven to 425°F. Remove stems from shiitakes, if using, and cut into thick slices. Tear the oyster mushrooms, if using, into thick strips.

On a large rimmed baking sheet, toss mushrooms with oil. Season with salt and pepper. Roast 15–20 min., until golden brown and crisp, stirring once or twice.

Meanwhile, in a microwave-safe bowl, combine the butter, garlic, and thyme. Cover with vented plastic and microwave 2 min., until butter melts and garlic is golden.

Drizzle butter over mushrooms and toss until well coated. Season with salt to taste.
