Salmon Burgers

Canned salmon and beans pack these burgers full of protein and flavor while still staying affordable.

> 1/2 (15 oz) can cannellini beans, drained and rinsed
> 1 (14.7 oz) can pink salmon
> 1/2 cup Italian style bread crumbs
> 1 large egg
> 1/4 cup fresh dill
> 1 lemon
> 1 tbsp olive oil
> 6 whole wheat hamburger buns

For Garnish (optional):

> Mayonnaise
> Lettuce
> Sliced tomato


To the bowl of a food processor, add the beans and puree until smooth.
Drain the salmon, also removing and discarding any bones. To food processor, add salmon, bread crumbs, egg, and dill. Zest the lemon into food processor. Season with salt and pepper. Pulse until mostly smooth.
Form mixture into 6 patties (around 3 inches each). Heat the oil in a large skillet over medium. Add patties and cook 4–5 min. on each side, until firm. Serve on the buns with mayonnaise, lettuce, and tomato, if desired.
