Grilled Shrimp Paella Foil Packets

Take these Spanish-inspired foil packets out to the grill. Chicken-based chorizo and shrimp add plenty of protein, while frozen rice and pepper strips make this recipe easy for any night of the week.

> Heavy-duty aluminum foil
> 2 (10 oz) pkgs frozen rice
> 1/2 (12 oz) pkg Nature's Promise® Chorizo Chicken Sausage
> 1 (1 lb) bag frozen raw large shrimp, thawed
> 1 (14.5 oz) pkg can no-salt-added diced tomatoes
> 1 (16 oz) pkg frozen mixed pepper strips, thawed
> 1 packet low-sodium Sazon coriander and annatto seasoning (optional)
> 1 tsp sweet paprika


Set grill or grill pan to medium-high. Cut 4 (12-inch) square pieces of heavy-duty foil. Divide the rice among foil squares. Form an even layer in the center of the foil, leaving space on all four sides.
Slice the sausage into ¼-inch-thick slices. In a large bowl, combine sausage, shrimp, tomatoes, pepper strips, seasoning packet, if using, and paprika. Season with salt and pepper. Stir to combine. Divide evenly among packets over rice. Fold sides of foil up around mixture and roll edges tightly to seal.
Place packets on grill. Cook 15–20 min., until shrimp and rice are cooked through. Let cool before opening packets.
