1/4 lb potatoes

2 chicken link sausages

1 cup egg substitute

1 cup nonfat plain Greek yogurt

1 cup 1% cottage cheese

1/4 cup whole wheat flour

1 tsp garlic powder

1/4 tsp ground black pepper

2 cups baby spinach, coarsely chopped

1/2 cup shredded white cheddar cheese
>
1 medium tomato, thinly sliced

Preheat oven to 325°F. Spray 9-inch round pie dish with cooking spray.

Place potatoes in enough water to cover and cook for 10–12 minutes or until tender. Drain and allow to cool.

Cut sausage into rounds or chop into small chunks. In nonstick pan over medium-low heat, sauté cut sausage until browned and set aside.

In a medium bowl, combine egg substitute, Greek yogurt, cottage cheese, flour, garlic powder and pepper and stir together until smooth.

Cut potatoes into small chunks and add, along with sausage, spinach and 1/4 cup of cheese, to egg mixture.

Pour mixture into pie dish and top with remaining cheese and sliced tomatoes. Bake until set, about 45 minutes.
