Jones Dairy Farm Sausage and Sweet Potato Breakfast Hash

This easy breakfast hash skillet is perfect for breakfast or brunch! Made with sweet potatoes, all natural sausage, peppers, and eggs, ready in 30 minutes, and great for Whole30 and Paleo diets.

> 1 (5 oz) pkg Jones Dairy Farm All Natural Golden Brown Turkey Sausage Patties
> 2 medium sweet potatoes, peeled and diced
> 1 red bell pepper, cored, seeded, and diced
> 4 eggs
> 1 small purple or white onion, chopped small
> 2 tbsp olive oil, divided
> 2 garlic cloves, minced
> 1 tsp paprika


Preheat oven to 400 °F.
Using large, oven safe skillet over medium heat, add 1 tablespoon olive oil. Add diced sweet potatoes, cook until tender, about 5-7 minutes. Remove from skillet, set aside.
Using the same skillet, cook sausage for 2 minutes on each side. Remove from pan and chop. Set aside.
Add 1 tablespoon of oil to skillet. Add onions, garlic, and peppers. Stir for 2 minutes. Add paprika. Cook and stir for another minute until tender. Season with salt and pepper to taste.
Add sweet potatoes and sausage to skillet. Toss everything together for 1-2 minutes.
Turn off heat. Make 4 indentations to make room for eggs. Crack an egg in each pocket, transfer skillet to oven and bake for 10-15 minutes until eggs are set and cooked to your liking.
Remove from oven. Garnish with optional toppings and serve.

You may skip the oven and cook it completely on your stove-top. Just make sure you set the heat to low to prevent the potatoes from burning and cover the skillet so the eggs cook faster.
