> 2 medium zucchini
> 2 tbsp butter
> 2 cloves garlic, thinly sliced
> 2 tbsp minced parsley
Halve each zucchini lengthwise and then thinly slice into half-moons. In a 12-inch skillet, melt the butter on medium. Add the garlic and cook 2 min., stirring often, until golden.
To skillet, add zucchini. Increase heat to medium-high. Cook 6–8 min., stirring often, until just tender. Season with salt and pepper to taste. Garnish with the parsley.
