> 1 cup parsley leaves
> 1 cup mint leaves
> 1 cup torn dill
> 2 cups watercress, thin stems and leaves only
> 1/2 cup snipped chives
> 1/2 cup shaved Parmesan cheese


Wash the herbs in ice-cold water and spin dry in a salad spinner, then lay them out on a towel to air-dry.
To make the dressing: Whisk together the dijon mustard, lemon juice, and lemon zest, then slowly pour in the olive oil.
Season the dressing with salt and pepper.
Toss all of the herbs, watercress, and shaved parmesan cheese together with the dressing. Season with salt and pepper if desired and serve immediately.
