1 1/2 lb fresh sweet potatoes

2 large Granny Smith apples

2 cups fresh cranberries

3 tbsp brown sugar

1 tsp cinnamon

1/4 tsp ground cloves

1 tsp kosher salt

Preheat oven to 425 F and line a large rimmed baking sheet with foil.

Cut the sweet potatoes in half lengthwise and then into 1/4 inch thick half-moon shape pieces and place on baking tray. Core and slice the apples into the same sized thick wedges and add to the sweet potatoes. Pour cranberries onto the sheet pan, and sprinkle with brown sugar, cinnamon, cloves and salt. Add the olive oil and gently toss to combine.

Cook in the oven for 18-22 minutes, spinning the tray after the first 10 minutes of cooking, or until potatoes are tender and lightly browned. Serve and enjoy!
