Sesame Chicken and Rice Salad with Edamame

Using shredded rotisserie chicken and precooked brown rice, this lunch or dinner salad comes together quickly and can keep in the refrigerator for up to three days. Just add the chopped cashews before serving.

Ingredients

> 1 (15.9 oz) Nature's Promise® Precooked Brown Rice
> 4 tbsp olive oil
> 2 tbsp lime juice
> 2 tbsp low-sodium soy sauce
> 1 cup shelled edamame
> 1/2 (12 oz) pkg rainbow slaw mix
> 2 cups shredded or cubed cooked chicken
> 2 tsp toasted sesame oil
> 2 tsp sesame seeds
> 1/2 cup chopped cashews, to garnish

Microwave the rice according to package directions. Meanwhile, in a large serving bowl, whisk the olive oil, lime juice, and soy sauce. Season with salt and pepper.

To bowl, add rice, breaking up any large clumps. Add the edamame and slaw mix. Season with salt and pepper. Toss to combine. In a small bowl, toss the chicken, sesame oil, and sesame seeds. Top rice salad with chicken and toss to combine. Garnish with the cashews.
