Sheet Pan Tikka Masala Chicken and Cauliflower

Jarred simmer sauce is the star of this flavorful, five-ingredient sheet pan dinner. Give cauliflower a head start in the oven, add chicken to the pan, then sprinkle with cilantro and serve with warm naan (and extra sauce) on the side in this weeknight winner.

Ingredients

> 1 (15 oz) jar tikka masala simmer sauce, divided
> 1 medium head cauliflower, cut into small florets
> 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
> 1/4 cup chopped cilantro
> 1 (8.8 oz) pkg naan

Preheat oven to 425°F. Line a large rimmed baking sheet with parchment.

Reserve ½ cup simmer sauce and set aside. Add the cauliflower to prepared baking sheet and drizzle half of remaining simmer sauce on top; season with salt and pepper and toss until thoroughly combined. Spread in an even layer and roast 20 min.

Meanwhile, in a medium bowl, season chicken with salt and pepper and toss with remaining simmer sauce. Remove baking sheet from oven and nestle chicken among cauliflower. Roast 15–20 min., until chicken is cooked through and cauliflower is tender. Toss chicken and cauliflower to evenly distribute sauce and sprinkle with the cilantro. Warm both the naan and reserved sauce; serve with chicken and cauliflower.
