Shrimp Linguine alla Vodka

A seafood-rich take on an Italian-American classic, this quick dish starts off with store-bought sauce to get dinner on the table even faster.

Ingredients

> 1 (16 oz) pkg linguine
> 2 tbsp olive oil
> 1 tbsp minced garlic
> 1 tsp crushed red pepper
> 1 lb large, peeled deveined shrimp
> 1/2 (26 oz) jar Nature's Promise® Organic Traditional Pasta Sauce
> 1/4 cup vodka
> 1/2 cup low fat half & half
> 1/4 cup grated Parmesan 
> 2 tbsp finely chopped parsley

Cook the linguine according to package directions. Reserve ¼ cup cooking water.

In a wide 5- to 6-qt pot, heat the oil on medium. Add the garlic and red pepper. Cook 1 min., stirring often. Add the shrimp and cook 1 min. Add the pasta sauce and vodka. Heat to a simmer on high. Reduce heat and simmer 5 min., stirring often. Remove from heat.

Stir in the half & half and Parmesan. Add cooked linguine and reserved cooking water. Toss until combined. Season with salt and pepper to taste. Garnish with the parsley.
