Soba Salad with Edamame and Peppers

Ingredients

> 1 (8 oz) pkg soba noodles
> 1 cup frozen shelled edamame
> 2 cups frozen mixed pepper strips
> 2 green onions
> 1/2 cup Taste of Inspirations® Sesame-Ginger Dressing

Steps

Cook the soba noodles according to package directions. One minute before soba is cooked, add the edamame and pepper strips. Finish cooking until soba is al dente and vegetables are heated through. Drain well and rinse with cold water.

Meanwhile, thinly slice the green onions.

Toss the soba and vegetables with the dressing. Season with salt to taste. Garnish with green onions.
