> 2 cups instant brown rice
> 1 tsp toasted sesame oil
> 1 tsp canola oil
> 1 lb chicken tenderloins, cut into large chunks
> 1 tbsp minced garlic
> 2 eggs
> 2 tbsp soy sauce
> 1 (16 oz) bag frozen mixed vegetables
Cook the rice according to package directions in microwave.
Meanwhile heat a large nonstick skillet over medium high heat until hot. Add the canola, sesame oil, chicken and garlic. Cook for 3-4 minutes or until chicken is browned and cooked all the way through.
Move the chicken to one side of the pan. Add the eggs and using a spatula, scramble until fully cooked.
Add the rice, vegetables, and soy sauce to the pan. Continue to cook, stirring often until well mixed and hot; about 3-4 minutes.
Bowl up and enjoy!
