Spiced Apple Cupcakes with Blue and White Cream Cheese Frosting

Ingredients

> 1 (15.2 oz) pkg spice cake mix
> 2 apples
> 3 eggs
> 1/3 cup vegetable oil
> 1/2 cup water

Icing:

> 6 oz cream cheese
> 6 tbsp unsalted butter
> 1 tsp vanilla extract
> 1 cup confectioners' sugar
> blue food coloring

Preheat oven to 350F. Peel and grate the apples into a large bowl. Add the eggs, oil and water and mix well. Add the cake mix and stir until well blended and batter is smooth.

Line 12 muffin cups with cupcake liners. Fill the liners ¾ of the way with the batter. Bake for 22-25 minutes or until a toothpick inserted into the center of the cupcakes comes out clean. Cool on a wire rack.

Meanwhile, soften the butter in the microwave on HIGH for 8-10 seconds. Place the cream cheese in a microwave safe container and soften by microwaving on HIGH for 10-15 seconds. Whip softened butter and cream cheese in a stand mixer or with a hand mixer until smooth and creamy. Add the vanilla and mix well. Slowly add ¼ cup confectioners’ sugar at a time until incorporated while mixing. Remove half of the icing and add blue food coloring until achieving desired blue color.

Ice half the cupcakes with white icing and the other half with blue icing.
