Spicy Bowtie Pasta with Ham and Edamame

No need to make a flour-based sauce for this creamy dish—the cream cheese does all the work for you (substitute plain cream cheese if jalapeño is too spicy). Edamame (soy beans) add an extra dose of protein and fiber.

Ingredients

> 12 oz bow-tie pasta
> 1 cup frozen shelled edamame beans
> cooking spray
> 1/2 cup green onions, chopped
> 1/2 cup red bell pepper, diced
> 4 oz jalapeño cream cheese
> 1 cup milk
> 1/2 cup grated mozzarella or cheddar
> 1 cup ham, diced

In a large pot of salted water, cook pasta according to package directions. Add edamame for last 2 min. of cooking time. Drain, reserving 1 cup cooking liquid, and set aside in a large bowl.

While pasta is cooking, spray a skillet with cooking spray. Reserve 2 tbsp chopped onion for garnish, add remaining onions with diced pepper to pan and cook until softened, about 2 min. Lower heat and whisk in cream cheese and milk, stirring until smooth and creamy. Remove from heat and stir in grated cheese and ham.

Pour sauce over drained pasta and edamame and toss well. Add reserved pasta water if sauce is too thick. Sprinkle with reserved green onions and serve.

Use gluten-free pasta to make this dish completely gluten-free.
