Ingredients

3 tbsp olive oil

1 tsp smoked paprika

1 tsp cumin

1/4 tsp cayenne

2 (8.8 oz) pkgs Nature's Promise® Microwave Long-Grain Rice

1 cup diced peppers

1 lb chicken tenders
>
1 cup cherry tomatoes
>
2 oz thinly sliced Spanish-style spicy chorizo

2 tbsp finely chopped parsley

In a small bowl, whisk the oil, paprika, cumin, and cayenne. To a large microwave-safe bowl, add the rice and break up clumps with a spoon. Stir in diced peppers and drizzle with half of paprika-oil mixture. Cover and microwave 3 min., until hot.

Heat a large grill pan on medium. Cut the chicken into small cubes and add to remaining oil mixture, tossing to coat. Season with salt and black pepper. Add chicken to pan and grill 8–10 min., until cooked through, stirring occasionally.

Meanwhile, halve the tomatoes and quarter the chorizo slices. Divide rice mixture among 4 bowls. Top with chicken, chorizo, tomatoes, and parsley.
