Greek Cucumber and Tomato Salad

Ingredients

> 1 large seedless cucumber
> 1 pint cherry tomatoes
> 1/2 medium red onion
> 1/2 cup Taste of Inspirations Greek Vinaigrette
> 1/4 cup fresh mint leaves
> 1/2 cup feta cheese crumbles 

Steps

Cut the cucumber in half lengthwise and thinly slice in wedges. Add to a large bowl. Halve the cherry tomatoes and thinly slice the red onion. Toss into the bowl and mix in the taste of Inspirations Greek Vinaigrette until all vegetables are coated.

Pour into a bowl or serving tray. Tear the mint leave and sprinkle the feta cheese on top and gently mix in. Serve and enjoy.
