Spicy Queso with Chorizo

Creamy cheese dip topped with Mexican sausage will have your guests devouring every last spoonful. Pair it with blue corn chips for an appetizer tailormade for the Fourth of July.

Ingredients

> 6 oz fresh Mexican-style chorizo sausage, casings removed
> 8 oz white American cheese, cut up
> 2/3 cup low-fat milk
> 1/2 tsp chili powder
> 1/2 tsp hot sauce
> 4 oz pepper Jack cheese, coarsely grated
> 1 (9 oz) pkg Nature's Promise® Blue Corn Tortilla Chips

To an 8-inch nonstick skillet, add the chorizo and cook on medium-high until browned, 8 min., stirring and breaking up chorizo into crumbles with back of spoon.

To a medium microwave-safe serving bowl, add the American cheese, milk, and chili powder. Cover with vented plastic. Microwave 2–3 min., until cheese is mostly melted, stirring halfway through.

Into bowl, stir the hot sauce and pepper Jack cheese. Microwave another 1 min., until cheeses have melted and mixture is smooth, stirring to combine. Spoon cooked chorizo on top of queso. Serve immediately with the tortilla chips.

Use a mini slow cooker to keep this dip warm and creamy while serving.
