Spinach and Ground Beef Flatbreads

These are similar to ‘pides’, the Turkish version of pizza. Topped with ground beef, spinach and feta, they make great snacks or a light meal with salad. Heating the baking sheet first ensures crisp pastry, but you can skip this step if you’d prefer.

Ingredients

> 1 (5 oz) bag fresh spinach
> 1 (.75 oz) package mint
> 1/2 cup chopped onion
> 1 tbsp olive oil
> 1/2 cup chopped onions
> 1/2 lb 85% lean ground beef
> 1/2 tbsp minced garlic
> 1 sheet Simply Enjoy puff pastry, thawed (from a 17.6 oz box)
> 1/4 cup crumbled feta cheese
> 2 tbsp sesame seeds

Steps

Place a metal baking sheet in the oven on the middle rack and preheat the oven to 400°F. Chop the garlic. Pick the mint leaves off the stems, chop roughly and set aside.

Place the spinach in a large microwave bowl and microwave 1-2 min., or until wilted. Toss with tongs and microwave another 1 min. if necessary. Transfer to a colander and press out as much moisture as possible. Meanwhile, heat the oil in a frying pan and fry the onions, garlic and salt (in moderation) and ground pepper for 5 min. on low heat. Add the ground beef, and cook on medium heat, stirring frequently to break up any lumps, 10 min., or until meat is cooked through. Remove the pan from the heat and mix in 2/3 of the chopped mint.

Meanwhile, unfold cut the puff pastry sheets into 4 pieces. Roll each piece into a 7x4 inch rectangle and then fold in the narrow ends to create a boat shape. Pinch the edges up slightly to create a rim. Transfer pastry to a sheet of parchment paper. Repeat with remaining pastry rectangles. Divide the ground beef among the 4 pastry ovals, top with the spinach and cheese and sprinkle with the sesame seeds.

Remove the hot baking sheet from oven and carefully transfer parchment paper with flatbreads to baking sheet. Return to oven and bake about 20 min. or until flaky and golden. Sprinkle with the remaining mint and serve.

Sunday prep steps:

Preheat oven to 400°F. Place spinach in a large microwaveable bowl. Microwave 2 min., until wilted.

Transfer spinach to colander and press out moisture.

In frying pan, cook onions, ground beef, salt, and pepper in oil until done, 6–8 min., stirring frequently. Stir in garlic, and cook 1 min. Remove from heat.

Chop mint. Stir ⅔ of chopped mint into beef mixture. Unfold and cut puff pastry sheet into 4 pieces. Roll and fold each piece into boat shape. Place on parchment-lined baking sheet.

Divide ground beef among pastry ovals. Top with spinach and cheese, and sprinkle with sesame seeds. Bake about 20 min., until flaky and golden.

10 min. before ready to serve:

Preheat oven to 425°F. Place flatbreads on foil-lined baking sheet and bake 10 min., until toasted and heated through.
