Ingredients

2 stalks celery

2 tbsp olive oil

1 lb sweet Italian sausage links

1 cup shredded carrots

1/2 cup chopped onions

1 tbsp fennel seeds

1 1/2 cups tomato sauce

1 (15.5 oz) can cooked lentils

1 cup watercress leaves

Slice the celery. Heat 1 tbsp oil in a skillet or large heavy saucepan. Brown the sausage for 4 min., flipping occasionally. Cover and continue cooking on low for 3–4 min. until sausage is cooked through. Transfer sausage to a plate and cover loosely with foil.

Heat remaining 1 tbsp oil over medium-high heat. Add the celery, carrots, onions, and fennel seeds; sauté 3 min. Add the tomato sauce and cook, stirring occasionally, until vegetables are tender, about 5 min.

Stir in the lentils and season with salt (in moderation) and pepper. Plate the lentil mixture and top with sausage. Garnish with watercress.
