Stir-Fried Pork with Rice

Ingredients

> 1 lb boneless pork chops
> 1 (11 oz) can mandarin oranges in light syrup
> 2 tbsp soy sauce
> 1 (8.8 oz) pkg 90 second brown rice
> 2 cups frozen mixed vegetables
> cooking spray

Cut the pork into ½-inch cubes. Drain the mandarin oranges and reserve 2 tbsp syrup. Coat a large, heavy bottom skillet with cooking spray and place over medium-high heat.

Add pork cubes to the pan and cook for 4 min., or until browned. Add the soy sauce and reserved mandarin syrup. Reduce heat to medium and stir until pork is coated. While pork cooks, prepare rice according to package directions.

Add rice and mixed vegetables to the pan and stir-fry over high heat for 3 min. Add the mandarin oranges and stir to combine. Divide among 4 bowls.
