Stovetop Lasagna

Lasagna in a quarter of the time it normally takes, this simple and easy version uses just one skillet so clean up after dinner is a breeze.

Ingredients

> 1 (24 oz) jar tomato, basil pasta sauce
> 1 (8 oz) pkg lasagna  oven ready noodles
> 1 cup ricotta cheese
> 1 (8 oz) pkg mozzarella cheese
> 1 (0.75 oz) pkg basil

In a large nonstick skillet, combine pasta sauce and 1½ cup water. Bring to a simmer over high heat, then reduce to low. Break noodles into thirds and stir, a few pieces at a time, into the sauce. Stir the noodles in the sauce making sure every piece is coated in sauce.

Simmer the noodles for 20 min., stirring every few min. to make sure noodles are not sticking together. Meanwhile, cut the mozzarella into thin slices and chop the basil.

Dollop ricotta cheese over the noodles and place mozzarella slices on top, covering the noodles. Increase heat to medium-low, cover, and cook for 5 min. or until noodles are tender. Garnish with chopped basil.
