8 large eggs

1 (0.75 oz) pkg chives

1 1/2 cups prepared bread stuffing

2 tbsp olive oil

1/2 cup shredded cheddar cheese

Beat the eggs in a bowl, with salt and pepper. Chop the chives and stir them in with the eggs, reserving ⅓ for garnish. Meanwhile, reheat the stuffing in a separate pan.

Heat ½ tbsp olive oil in a small nonstick pan over medium-high heat. Pour ¼ of the egg mixture into the pan. Use a fork to pull the egg to the center of the pan, and cook for about 20 sec., or until egg is slightly set.

Cook just until top of omelet begins to set. Add ¼ of the the stuffing mix to half the omelet and sprinkle with ¼ cup cheese. Use a spatula to fold the empty half of the omelet over the one with the stuffing and cheese. Tip the pan and use the spatula to remove omelet from pan. Garnish with ¼ of the reserved chives. Repeat 3 more times with the remaining oil, egg mixture, stuffing mix, cheese, and chives.
