3 jalapenos

4 shallots

¼ cup white vinegar

½ (28 oz) can crushed tomatoes

Remove stems from peppers and skin from shallots, and place together in the bowl of a food processor. Add garlic and white vinegar. Pulse to combine.

Set in a saucepan with sugar and tomatoes, and bring to a boil. Cook on high heat for 10 min. or until relish reduces slightly. Season with salt to taste. For best results, allow relish to cool fully before storing in a glass jar or plastic container.
Tips
Be sure to prepare this with the windows open, as the fiery vapors may burn your eyes.
