Sweet Corn and Lima Bean Succotash

Ingredients

> 2 tbsp olive oil
> 1 cup chopped red onion
> 1 cup chopped bell pepper
> 1/2 tsp kosher salt
> 2 tbsp chopped garlic
> 1/8 tsp crushed red pepper flakes
> 2 cups  sweet white corn kernels, fresh or frozen
> 2 cups lima beans, fresh or frozen
> 2 cups sliced okra, frozen
> 1 cup sliced cherry tomatoes
> 1/2 cup heavy whipping cream
> 1 tbsp chopped basil

Preheat a large 12 inch over medium high heat. Add the olive oil, onions, bell pepper and salt. Cook stirring occasionally, until vegetables are soft, about 4-5 minutes. Add the chopped garlic and crushed red pepper, and cook for an additional 1-2 minutes, stirring often.

Add the corn to pan with the vegetables. Stir in and cook for 2-3 minutes. Add the lima beans, okra cherry tomatoes, and cream. Bring cream to a boil so it bubbles, and cook for 2-3 additional minutes, stirring occasionally.

Add the fresh basil right before serving.
