Ingredients

1 tbsp olive oil

1 lb lean ground turkey

2 tsp sodium-free chili powder

1/4 tsp ground cumin

1 ripe avocado, peeled and pitted

1/2 cup chopped cilantro
>
1 lime

1/2 cup nonfat Greek yogurt

1 (15.9 oz) pkg precooked Nature's Promise® Brown Rice

2 cups frozen corn, thawed
>
1 (15 oz) can low-sodium black beans, drained and rinsed
>
1/4 cup chopped red onion
>
1 cup chopped tomatoes

In a 12-inch skillet, heat the oil on medium-low. Add the turkey, chili powder, and cumin and cook 8–10 min., until browned, breaking up with a wooden spoon. Season with salt and pepper.

Meanwhile, cut the avocado into chunks. In a blender or food processor, combine the avocado, cilantro, juice of the lime, and Greek yogurt. Season with salt and pepper. Blend 1–2 min., until smooth.

Microwave the rice according to package directions. If desired, microwave the corn according to package directions. Divide rice equally among 4 bowls. Top bowls with cooked turkey, beans, corn, onion, and tomatoes. Dollop avocado-lime sauce on each bowl.
