Grilled Stuffed Zucchini

A little ham goes a long way in this satisfying dinner that lets the zucchini shine. Precooked rice gets it on the table in less than 30 minutes.

Ingredients

> 4 medium zucchini
> 2 tbsp olive oil
> 1 (8.8 oz) pkg Nature's Promise® Microwave Long-Grain Rice
> 1 1/2 cups shredded Cheddar cheese, divided
> 1/2 cup finely diced ham
> 1/2 tsp fresh thyme

Set grill to medium. Halve the zucchini lengthwise. With small spoon, scrape out the seeds and flesh, leaving at least ¼-inch-thick walls. Reserve seeds and flesh.

Brush zucchini halves all over with the oil and season with salt and pepper. Grill zucchini, cut-sides down, 4–5 min., until grill marks appear. Transfer to a cutting board and let cool slightly.

Meanwhile, finely chop scraped zucchini seeds and flesh. Add to a medium microwave-safe bowl along with the rice and cover with vented plastic. Microwave 2 min.

To bowl with rice, add 1 cup cheese, ham, and thyme and stir to combine. Season with salt and pepper to taste. Stuff mixture into zucchini halves, packing tightly in cavities. Top with the remaining ½ cup cheese.

Place stuffed zucchini on grill and cook, covered, 5–7 min., until filling is warm and zucchini are tender. Carefully remove from grill and serve.
