Instant Pot® Make-Ahead Pork Ribs

Cooking ribs in the Instant Pot® saves hours of cooking time and makes them incredibly tender. Make ahead, then grill right before you’re ready to serve.

Ingredients

> 2 (1 1/2- 2 lb) racks pork baby back ribs
> 2 tbsp brown sugar
> 3 tsp chili powder
> 2 tsp garlic powder
> 1 cup water
> 1/4 cup apple cider vinegar
> 1/2 cup Nature's Promise® Organic Barbecue Sauce, plus more to serve

Steps

Remove the papery skin from the back of the ribs. Rinse the ribs and pat dry. In a small bowl, combine the brown sugar, chili powder, garlic powder, salt, and pepper. Rub mixture over ribs generously, coating all sides.

Place metal trivet in bottom of Instant Pot®. Pour the water and vinegar into bottom of Instant Pot. Place the ribs inside the pot, standing them on their side on the trivet and wrapping around the inside of pot.

Seal Instant Pot® and set to high pressure. Cook 23 min. Let naturally release 5 min. Quick release remaining pressure.

Toward the end of the ribs’ cook time, heat a gas or charcoal grill to medium-high. Arrange cooked ribs on grill and cook 5–6 min. per side, brushing liberally with the barbecue sauce. Transfer ribs to a cutting board and cut into 4 sections (about 3–4 ribs each). Serve with additional barbecue sauce.

Tips

If you don’t have an Instant Pot, you can cook the ribs in the oven before grilling. Brush racks of ribs on both sides with canola oil, season with salt and pepper, and wrap tightly in heavy-duty foil. Place curved-side up in a large roasting pan. Roast at 500°F for 30 min., then reduce heat to 250°F and roast 1½ hours until meat is tender.
