Ingredients

2 cups chopped broccoli

1 small red onion

2 carrots
>
1 medium zucchini

Heavy duty foil
>
4 (3- 4 oz) salmon fillets
>
1/2 cup Taste of Inspirations® Teriyaki Marinade
>
1/4 cup chopped fresh cilantro

Preheat grill to medium heat. Cut onion, carrot and zucchini into thin, bite sized pieces and add to a bowl with the broccoli. Toss with oil and lightly season with salt and pepper.

Tear off 4, 18 inch long pieces of aluminum foil. Place ¼ of vegetable mixture in the middle of each aluminum foil sheet. Top with salmon fillets, then liberally brush 2 tbsp of Taste of Inspirations Marinade on each filet.

Place on grill and close cover. Cook for 8-10 min or until salmon easily flakes with a fork. Sprinkle with cilantro leaves on top of salmon and serve.
