Thanksgiving Leftovers Egg Rolls

Need an idea for an easy day-after Thanksgiving appetizer or snack? These air fryer egg rolls combine many holiday flavors in a crispy, handheld package. Serve with gravy for dipping.

Ingredients

> 8 egg roll wrappers
> 1/2 cup leftover  mashed potatoes
> 1/2 cup chopped cooked turkey
> 1/2 cup leftover stuffing
> 1/2 leftover vegetables (like sweet potatoes, green bean casserole, etc)
> 1/2 cup cranberry sauce
> Cooking spray
> Turkey gravy, warmed, to serve (optional)

Place 1 egg roll wrapper on a cutting board. Spread 1 tbsp mashed potatoes diagonally across center of wrapper. Repeat with 1 tbsp each of turkey, stuffing, vegetables, and cranberry sauce. Dab edges of wrapper with water. Fold bottom corner up over filling. Fold side corners into center, then roll to close. Place roll, seam-side down, on a large plate. Repeat with remaining wrappers and fillings.

Preheat air fryer to 400°F. Coat rack or basket with the cooking spray. Working in batches if needed, arrange egg rolls in a single layer, seam-side down, on rack. Spray with cooking spray. Cook 12–13 min., until rolls are browned and crisp, turning halfway through. Serve egg rolls with the gravy for dipping, if desired.
