To make the turkey broth, combine the following ingredients in a stockpot: leftover turkey carcass, 3 scallions, 8 slices ginger, 6 dried shiitake mushrooms, 16 cups water. Bring to a boil and simmer for 3 hours. Remove bones before serving.

Prepare packaged ramen noodles according to the package. Do not add the seasoning packet. Drain and divide noodles among bowls.

Cover the noodles with broth and add toppings: leftover turkey, soft boiled egg, cooked bacon, and remaining scallions.
