2 tbsp olive oil

1 medium onion, finely chopped

2 tbsp all-purpose flour

1 cup low-sodium vegetable or chicken stock

1/2 cup fat-free half & half
>
1 (16 oz) Nature's Promise® Frozen Peas

1 lemon, zested
>
1 (0.5 oz) pkg Nature's Promise® Organic Mint, thinly sliced

In a medium pot, heat the oil on medium. Add the onion and cook 5–6 min., until softened. Add the flour and cook 1–2 min., stirring frequently. Slowly stream in the stock and half & half, stirring constantly to avoid lumps.

Add the peas and bring mixture to a boil. Reduce to a simmer and cook 4–5 min., until peas are tender. Stir in the lemon zest and mint. Transfer mixture to a serving bowl and serve immediately.
