Ingredients

1 yellow onion, diced

2 carrots, sliced

2 stalks celery, diced

2 lb Yukon Gold or red potatoes, cubed

2 lb jackfruit pieces

1 small green cabbage, cored and wedged
>
3 qt vegetable stock
>
4 tbsp pickling spices
>
1 tbsp smoked paprika
>
2 tsp black peppercorns
>
1 tbsp onion powder
>
2 tsp mustard seeds
>
2 bay leaves
>
Red pepper flakes, to taste
>
3- 4 tbsp nutritional yeast
>
Salt and pepper to taste
>
Dill and cilantro (optional for garnish)
Steps

Saute onion, carrot, and celery in a crockpot on high heat until softened.

Add the rest of the ingredients, cover, and cook on high for 2 hours or until potatoes, jackfruit, and cabbage are tender.

Serve garnished with fresh dill and cilantro.
