Waldorf Chicken Salad

We took the delicious, classic elements of a Waldorf salad and substituted wholesome Greek yogurt for mayo and added hearty chicken to make it a meal.

Serves 4
450 calories per serving


> 2 cups shredded rotisserie chicken
> 1 cup grapes
> 1 cup walnut pieces
> 1 cup diced celery
> 1 cup plain Greek yogurt
> 1 tbsp mustard
> 1 tbsp red wine vinegar
> 1 tbsp honey
> 1 (12 oz) pkg mixed greens


Break the shredded chicken into smaller pieces and halve the grapes. Set in a large bowl along with walnuts and celery.
Whisk yogurt together with mustard, vinegar, and honey until smooth. Toss the chicken mixture with the dressing until fully combined. Serve over mixed greens or on a sandwich.
