White Bean Burger

> 1 (15 oz) can cannellini beans
> 1 large egg
> 2 tbsp red miso paste
> 3/4 cup panko bread crumbs
> 2 tbsp olive oil
> 4 whole-wheat hamburger buns


Drain and rinse beans, and set in a bowl. Mash with a potato masher or the back of a fork until chunky.
In a separate bowl, beat together the egg and miso paste. Add egg mixture to the beans along with the panko. Mix until fully combined. Shape mixture into patties.
Heat oil in a skillet over medium-high heat and cook burgers for 10 min., flipping halfway. Meanwhile, toast the buns. Serve burgers on buns with all of your favorite toppings.
