Ingredients

> 4 (about 1 1/2 lbs) thick-cut boneless center-cut pork chops
> 1 1/2 cups packed basil leaves
> 1 cup packed parsley leaves
> 2 tbsp capers, drained
> 2 anchovy fillets
> 1 clove garlic
> 1/2 tsp crushed red pepper
> 2 tbsp lemon juice
> 1/2 cup olive oil

Steps

1
Set half of grill to medium and half to medium-high.
2
Season the pork chops with salt and pepper. Grill pork 2 min. per side on hotter side of grill, until grill marks appear. Move pork to cooler side of grill and cook 4–5 min. per side, until an instant-read thermometer registers 145°F. Remove from grill and let stand 5 min.
3
Meanwhile, to a food processor, add the basil, parsley, capers, anchovies, garlic, and crushed red pepper. Pulse until very finely chopped. Transfer to a medium bowl and stir in the lemon juice and oil. Season with salt and pepper to taste.
4
Thinly slice pork and drizzle with herb sauce.
