1 cup canned fat-free vegetarian refried beans

2 large tomatoes, chopped

1/2 cup finely diced red onion

1/2 jalapeño pepper, seeded and minced

1/4 cup reduced-fat Mexican blend shredded cheese

1/4 cup chopped fresh cilantro

Preheat oven to 350°F. Spray a 1-quart baking dish with non-stick cooking spray.

In a medium bowl, combine refried beans, tomatoes, onion and jalapeños. Pour mixture into prepared baking dish.

Sprinkle cheese on top and bake for 10 minutes until cheese is melted. Top with cilantro.
