Caesar Pasta Salad

The only thing better than a Caesar salad or pasta salad is combining the two into one plant-forward meal. Quick to make and easy to love, this pasta salad can be a hearty entrée or a substantial side.

Ingredients

> 12 oz rotini or fusilli
> 1/3 cup mayonnaise
> 1/4 cup grated Parmesan, plus more to serve
> 2 tsp Santa Cruz Organic ® Organic Lemon Juice
> 1 tsp Dijon mustard
> 1/2 tsp Worcestershire sauce
> 1/4 tsp garlic powder
> 1 (15 oz) can chickpeas, drained and rinsed
> 2 romaine hearts, finely chopped
> 1/2 cup homestyle Caesar croutons

Bring a large pot of salted water to a boil on high. Cook the pasta according to package directions until al dente. Drain well in a colander and rinse with cold water to cool. Drain well again.

Meanwhile, in a large bowl, whisk together the mayonnaise, Parmesan, lemon juice, mustard, Worcestershire sauce, and garlic powder. Season with salt and pepper.

To bowl with dressing, add the chickpeas, romaine hearts, and cooked pasta. Stir to coat. To serve, crumble the croutons over top, and sprinkle with more Parmesan.
