California Summer Rolls

These easy summer rolls are packed with avocado, cucumber, rice, and imitation crab. Served with a quick sriracha mayo, this recipe is perfect for a light dinner, lunch, or substantial snack.

Ingredients

> 1 (8.8 oz) pkg Nature's Promise ® Precooked Jasmine Rice
> 1/4 cup mayonnaise
> 2 tbsp Frank's RedHot ® Sriracha
> 1 avocado
> 1/2 English cucumber
> 8 Blue Dragon ® Spring Roll Wrappers
> 1 (8 oz) pkg imitation crabmeat

Microwave the rice according to package directions. In a small bowl, combine the mayonnaise and sriracha. Set aside. Peel, pit, and slice the avocado. Thinly slice cucumber lengthwise into 2-inch spears. Fill a wide shallow dish or pie plate with warm water.

Working with 1 rice paper wrapper at a time, place in water and soak for 15 sec., until soft. Transfer to cutting board and spread out flat. In center of 1 wrapper, layer the crab, 2 tbsp rice, avocado, sauce, and cucumber. Season with salt and pepper. Fold sides of wrapper over filling. Fold bottom of wrapper up over filling, tucking under to create tight roll. Roll up to seal.

Place filled roll on a platter under damp paper towel. Continue filling and rolling with remaining ingredients. Discard damp paper towel. Serve with remaining sriracha mayo for dipping.

Tips

If you can’t find rice paper rolls, use small flour tortillas instead.
