Ingredients

1 cup Nature's Promise® Organic Italian Pearled Farro, rinsed

2 tbsp white balsamic vinegar

1/2 tbsp honey
>
1 tsp Dijon mustard
>
1/4 cup olive oil
>
1/2 cup mint leaves, minced
>
1 cup fresh cherries, pitted and halved
>
1 cucumber, finely chopped
>
1 (4 oz) pkg goat cheese, crumbled

Bring a medium pot of salted water to a boil. Add farro, bring to a simmer and then reduce heat to medium-low. Simmer until farro is cooked through, 25 to 30 minutes. Drain well.

In a large bowl, whisk together vinegar, honey, mustard and a pinch of salt. Slowly drizzle oil into bowl while whisking, until the dressing is emulsified. Add mint and whisk until combined. Season with salt and pepper to taste.

Add farro to bowl with dressing, tossing until well coated. To bowl, add cherries and cucumber. Toss to combine. Add crumbled goat cheese and gently toss. Season with salt and pepper.
