Ingredients
>
Cooking spray
>
1 (3 oz) box strawberry gelatin dessert mix
>
4 cups boiling water, divided
>
1 (3 oz) box berry blue gelatin dessert mix
>
3 (1/4 oz) envelopes unflavored gelatin
>
1 (14 oz) can sweetened condensed milk
Steps
1
Lightly grease two medium bowls with the cooking spray. In one bowl, stir the strawberry gelatin mix with 1 cup boiling water until dissolved. Repeat with the berry blue gelatin mix and 1 cup boiling water in the second bowl. Refrigerate both bowls until firm, at least 3 hours.
2
In a large bowl, sprinkle the unflavored gelatin over ¾ cup cold water; let sit 5 min., until water is absorbed and mixture is thickened. To bowl, add remaining 2 cups boiling water and whisk until fully dissolved. Add the sweetened condensed milk and whisk until smooth. Let mixture cool at room temperature 1 hour, until no longer warm to the touch.
3
Meanwhile, gently release gelatin from bowls, then cut each flavor into 1- to 2-inch pieces. Lightly grease a 10-cup Bundt pan with cooking spray. Alternate adding blue and red gelatin cubes to prepared pan to create an even mix of colors.
4
Slowly pour condensed milk mixture over gelatin cubes. Refrigerate overnight, until firm. Gently push gelatin mixture down with fingertips near rim to release seal from edge, then carefully invert cake onto serving platter. Slice to serve.
