Ingredients

1 (16 oz) pkg firm tofu, drained

2 cups self-rising flour, plus more for dusting

1 tbsp olive oil, divided

3/4 cup Nature's Promise® Organic Pizza Sauce

3/4 cup part-skim shredded mozzarella cheese
>
1 green bell pepper
>
3/4 cup sliced white mushrooms

Wrap the tofu in a kitchen towel or paper towels. Place a cast-iron skillet on top and let sit 20 min. to release excess water from tofu.

Preheat oven to 425°F. Break apart tofu into a large bowl. Add the flour and a pinch of salt. Knead until dough comes together, adding 1–2 tbsp water if needed. Divide into 2 equal-size balls of dough.

On a floured surface, roll out 1 dough ball to ½-inch thick, about 8–9 inches wide. Transfer dough to a 10-inch cast-iron skillet. Drizzle ½ tbsp oil over dough. Bake 5 min. Meanwhile, roll out second dough ball. Transfer first pizza to a sheet pan. Repeat baking second ball of dough in cast-iron skillet, drizzling with remaining ½ tbsp oil.

Increase oven temperature to 450°F. Spread the sauce over both pizza crusts and top with the mozzarella. Top with the bell pepper and mushrooms. Bake another 10–15 min., until crispy. Cut into slices and serve.
