Mexican Christmas Eve Salad

While Ensalada de Nochebuena is traditionally served on Christmas Eve, its vibrant mix of fruits and vegetables makes it a welcome addition to any meal. Beets, lettuce, jicama and fresh fruit are tossed in a bright orange vinaigrette, then finished with pumpkin and pomegranate seeds for added crunch.

Ingredients

> 1/2 cup extra virgin olive oil
> 3 tbsp lime juice
> 3 tbsp orange juice
> 2 tbsp Nature's Promise® Organic Blue Agave Nectar
> 3 seedless navel oranges
> 2 (8.8 oz) pkgs cooked whole beets
> 1 (4 oz) pkg Nature's Promise® Crunchy Green Leaf Lettuce
> 2 Gala apples, cored and thinly sliced
> 1 small jicama, peeled and thinly sliced into sticks
> 1/4 cup roasted pepitas or dry roasted peanuts
> 1/4 cup pomegranate arils

In a medium bowl, whisk the oil, lime juice, orange juice, and agave together until a smooth vinaigrette forms. Season with salt and pepper. Set aside.

Trim the tops and bottoms from the oranges so they sit flat on the cutting board. Using a sharp knife, remove the peel and white pith, following the curve of the fruit. Cut the oranges from end to end into ¼-inch-thick rounds. Cut the beets into ¼-inch-thick rounds.

Arrange the lettuce on a large serving platter. Top evenly with a layer of the oranges, beets, apples, and jicama. Sprinkle with pepitas and pomegranate arils. Serve with vinaigrette.
