Smashed Red Skin Potatoes with Buttermilk and Olive Oil   

Of the many ways to prepare potatoes, the method of smashing (similar to mashing) takes advantage of the red variety’s nutrient-rich skins. Fortified with iron and B vitamins, the skins add both texture and color. Creamy buttermilk smooths out the mixture, a balanced alternative to butter (rich and heavy) or milk (airy and light).

Triple Cranberry Sauce
