1 (3 lb) bag potatoes

4 cloves garlic

3/4 cup reduced-fat buttermilk

1/4 cup olive oil

1/2 (0.75) pkg chives

Halve the potatoes, cutting larger ones into quarters. Peel garlic. Heat a large pot of salted water to boiling on high. Add the potatoes and peeled garlic, and cook 20 min., until potatoes are soft. Drain and transfer to a large bowl.

To the potatoes, add the buttermilk and olive oil. Mash until mostly smooth. Season with salt and pepper. Slice the chives. Transfer potatoes to a serving dish and garnish with chives.
