Ingredients

3 lbs chicken wings

6 green onions
>
5 cloves garlic

3 tbsp dark brown sugar

1 tbsp hot sauce
>
1 1/2 tsp ground allspice
>
1 bay leaf
>
1 tbsp dried thyme
>
1/3 cup cider vinegar
>
1/4 cup vegetable oil

Roughly chop the onions and garlic and put in food processor.

Add the sugar, hot sauce, allspice, bay leaf, thyme, vinegar, oil and salt. Process until smooth.

Place chicken wings in a large bowl. Pour marinade over chicken, making sure it covers every piece, and refrigerate for at least 1 hour.

Meanwhile, preheat the oven to 400°.

Line 2 baking sheets with parchment or foil. Divide the chicken wings between the baking sheets and let come to room temperature.

Bake the wings in the middle of the oven for 40 min., turning every 10 min.

If the wings start to burn, cover with foil. Serve warm or at room temperature.
Tips
Make these a day ahead: Store baked wings in a covered container in the refrigerator. Place on lined baking sheet and cover loosely with foil. Preheat oven to 300° and bake for 20 min., or until heated through.
