Strawberry and Avocado Salad

Rich avocado, juicy berries, and a sweet homemade poppy seed dressing adorn this quick arugula salad.

Ingredients

> 1/2 small red onion, thinly sliced
> 2 tbsp apple cider vinegar
> 1 tbsp lemon juice
> 1 green onion, cut up
> 2 tsp sugar
> 1/2 tsp dry mustard powder
> 3 tbsp canola oil
> 1 tbsp poppy seeds
> 6 cups packed arugula
> 1 avocado, peeled, pitted, and diced
> 2 cups strawberries, hulled and quartered lengthwise

Steps

Soak the red onion in a small bowl of very cold water 10 min.

Meanwhile, in a blender, purée the vinegar, lemon juice, green onion, sugar, mustard powder, and oil until smooth. Season with salt and pepper to taste. Stir in the poppy seeds.

Drain and rinse red onion. Pat dry with paper towels. Arrange the arugula on a large serving platter. Scatter onions, avocado, and strawberries on top. Drizzle with poppy seed dressing.
