Cake

1 (18.25 oz) box yellow cake mix

1 (3.5 oz) box vanilla instant pudding mix

4 eggs

3/4 cup vegetable oil
>
1 1/4 cups 7UP®
Pineapple Topping
>
1 1/2 cups sugar
>
2 tbsp all-purpose flour
>
2 eggs, beaten
>
1/2 cup butter or margarine
>
20 oz can crushed pineapple, undrained
>
3 1/2 oz toasted coconut

Prepare the topping: Combine sugar and flour in stainless steel saucepan. Stir in eggs, butter, and pineapple. Cook over low heat, stirring constantly, until thickened. Remove from heat; stir in coconut.

For the cake: Combine cake mix, pudding mix, eggs, and oil in a mixing bowl. Beat until light and fluffy. Add 7UP® and beat well.

Pour into a greased 13x9x2-inch baking pan. Bake at 350° for 35 to 40 minutes or until done. Remove from oven.

Spread pineapple topping over warm cake. Cool on a wire rack.
