Maple Bacon French Toast

Ingredients

> 8 slices bacon
> 4 large eggs
> 1/2 cup low-fat milk
> 8 slices whole-wheat bread
> 2 tbsp maple syrup

Heat a large, dry skillet over medium heat. Cook the bacon, flipping halfway through, for about 5 min., or until golden brown and crispy. Remove bacon from pan and lay on a paper towel to dry, but DO NOT discard bacon grease in pan.

In a bowl, whisk together the eggs and milk, seasoning with salt and pepper.

Working in batches, soak bread-slices in egg-mixture, then cook the French toast in the leftover bacon grease for about 3 min. per side, or until golden brown and crispy. Remove cooked pieces and transfer to a plate; cover with aluminum foil to keep warm.

Divide the French toast and bacon among 4 plates. Drizzle maple syrup on top, and serve.

Tips

If your pan dries out before you finish cooking the French toast, add a little extra olive oil.
