Air-Fried Asparagus Fries

These breaded asparagus spears are deliciously crunchy and served with a garlicky and creamy sauce.

> 2 large eggs
> 1/2 cup grated Parmesan cheese
> 1 cup panko bread crumbs
> 1 lb asparagus spears, trimmed
> Cooking spray
> 1 lemon
> 1/4 cup light mayonnaise
> 1 tsp garlic powder


Preheat air fryer to 400°F. In a shallow bowl, whisk together the eggs and 1 tsp water. On a plate, combine the Parmesan and bread crumbs, and season with salt and pepper. Coat each asparagus spear in egg mixture and dredge in bread crumb mixture.
Lightly spray air fryer basket with the cooking spray. Add breaded asparagus in a single layer inside air fryer basket, working in 2–3 batches as needed. Spray asparagus with cooking spray. Cook 5 min., shaking occasionally, until golden.
Meanwhile, into a small bowl, grate 1 tsp zest and squeeze 1 tbsp juice from the lemon. Add the mayonnaise and garlic powder and stir until smooth. Season with salt and pepper. Serve sauce with air-fried asparagus.
